Site : In the heart of the Premier Cru vineyards of Domaine Chanson, this plot covers 4 hectares in the center of the Beaune territory.
The Vintage 2015 : After a cold winter and a mild spring, the weather conditions in summer were ideal with cold nights and warm days and enabled a perfect maturation of the grapes. The harvest started early September under a bright sunshine. The red wines develop beautiful aromas of ripe red and black berries with a fleshy texture. Vinification : whole bunch fermentation for approximately two weeks, the wines are then aged in our XVth century cellar for a period between 14 and 18 months. Moderate use of new oak.
Tasting : Bright ruby colour. Fragrances of violet mixed with intense aromas of ripe red berries (cherry and raspberry) mixed with liquorice. Subtle vanilla note. Well-balanced and complex. Tight and delicate texture. Elegant tannins. Very pure fruit. Long and spicy finish. Bright ruby. Intense aromas of black pinot fruit mixed with spices and violet. Mouth coating and complex. Tight texture. Delicate oak note. Long and spicy aftertaste
Food pairing : Enjoy with red or white meat, "Boeuf Bourguignon" and variety of regional cheeses, in particular goat's cheese and Citeaux.
