TERROIR : Sloping hillsides with a southeast exposure, a very draining ground, composed of a pink granitic crystalline rock well as of quartz. Small proportion of clay.
Gamay, black varietal with white juice.
VINEYARDS AND CELLARS
CULTIVATION OF THE VINE: exclusively manual, due to the steep slope. Heavy natural soil erosion checked by grassing over and mulching. Yields naturally limited by the terroir (less than 35hl/ha).
HARVESTING: manual, in small cases of 13 kg. Careful manual sorting of each grape.
VINIFICATION: parcel-by-parcel vinification in small tanks (45 hl).
Thorough destalking to remove the very green stalks of the Gamay. Cold maceration followed by a long fermentation (10-15 days) to allow the terroir aromas to emerge. Gentle punching of the cap.
MATURING: depending on the vintage, 20 % to 30 % ageing in mature oak barrels (1 to 4-years-old barrels), to enrich the silky, velvety texture without sacrificing finesse. The remainder is matured for 6 to 8 months in small tanks to preserve freshness.
TASTING NOTES : Intense colour with attractive purplish reflections. The Nose is complex: a beautiful maturity with notes of black fruits such as the blackberry, the cherry black or the blueberry. In mouth, wealth, softness and mineral tastes underline a perfect balance between freshness and aromatic complexity.

AGEING POTENTIAL: fruity during the first 3 years, 10 to 12 years of evolution
