The appellation Nuits-Saint-Georges includes numerous famous Premiers Crus. They are all rich in tannin giving them a high potential for laying down (5 to 15 years).
Tasting:
Tasting note: Deep nose developing flavours of black fruit combined with smokey and oaky hints. On the palate, it offers rich and generous flesh sustained by a well markedtannic structure. A wine wich truly expresses the strong personality of its "terroir". Very goog ageing potential.
Food/Wine pairing: Red meat in sauce, duck, light game, medium to full flavoured cheeses.
Serving temperature: between 17°C to 18°C.
Ageing potential: 7 to 10 years and more

Harvest: manual, in small cases of 13kg. Careful manual sortingof each grape
Vinification: Following total or partial destemming on the vintage, fermentation in small containers, gentle pressing ensure optimal vinification
Maturing: 12 to 14 mounths in French oak, with 40 to 50% new oak
Ageing: The cellar of the Bastions of the ancient Château de Beaune offer natural ambient conditions that are perfectly adapted to ageing the Premiers Crus.
